Garlic,Brussels Sprouts Almondine

Trying to think of an all around healthy side dish this Winter? Try brussels sprouts, garlic, and slivered almonds. Brussel sprouts and garlic are powerful cancer fighters and anti-oxidants, and almonds contain monounsaturated fats that help reduce the risk of heart disease. So, toast 2 tbsps almonds over medium heat for a couple of minutes, stirring frequently, and set aside. Slice 1 1/2#s of the brussels sprouts until they are almost shredded. Heat 2 tbsps olive oil add 6 cloves of thinly sliced garlic, and saute for a few minutes. Add the brussels sprouts, and cook for another 2-3 minutes. Stir in 1 tbsp maple syrup, 1/4c water, and some salt and pepper to taste. Cover and cook over med low heat for about 5 minutes. Remove the cover, stir in 1 tbsp cider vinegar, and cook for another 2 minutes. Add the almonds, stir together, and serve immediately!
